Fixing my Diet One Meal at a Time

When it comes to my diet, my focus isn’t on losing weight or being perfect. Instead, my goal is to find the foods that make me feel the best while still getting the macro nutrients I need. Continue reading on how I have focused on finding foods to help me improve my strength and immunity.

I am not a registered dietician or nutritionist. Everything I do is simply the result of trial and error, to find what works well for me.

Right now, that looks like keeping my meals simple. I do not make many extravagant meals that take a few hours to make. Even the breakfast pictured is only something I make when I have a few extra minutes in my morning. And no, the oranges are not generally placed this nicely.

However, I love this meal because it is simple and provides me with approximately 42 grams of protein and 6 grams of fiber. Could it be better? Sure. But remember, we are going for progress, not perfection.

  • 1 slice of Whole Grain Bread
  • 2 Eggs over easy
  • 2 slices of thinly sliced cheddar cheese (I use 1 slice if it is regular slices – but I worked with what I had today)
  • 1 whole orange (FYI I have not been sick this year, and have eaten one a day.)
  • 1 packet of RYZE country lemonade protein shake (not sponsored)

After my daughter was born, I worked hard to become the healthiest I could be. I was a stay-at-home mom, attending college, and had a routine that allowed me to be successful. As a result, I lost 50 lbs. and felt strong!

Fast forward to now, I have added 2 more kids to the bunch, work full-time an hour away from home, and I am constantly on the move. My time is much more limited than before, so I have needed to be more intentional this time around.

Goals This Year

My goal at the start of the year was to improve my immune system. Through diet, I feel I have been successful with that. I have a preschooler, and when he started school, I fully anticipated everyone in the house to be continuously sick. I am happy to report that since the start of the year, I have had a cold at most! This is huge progress for me. Last year I was sick for approximately 3 months on and off. It was awful!

Now that I feel I have solidified my first goal, I am ready to build on that. Next, I am looking forward to building my strength/endurance. I am slowly adding more protein to my diet and have started by walking more.

I have found over the years that generally adding to my goals slowly helps me be successful.
